Weeknights can be busy, and the week can be lengthy by the time Thursday rolls around. When it feels like stamina will fade before Friday, noodles are curative. They are a dish I always associate with eating on the couch with my feet tucked up under my ass and the cat curled up on the cushion beside me.
Noodles equal a quality vacation. My favourites are always a little bit spicy and definitively slurpy. Chow mien, Udon with mushrooms or pork, spicy Thai peanut noodles, or Pad Thai, (made with ramen or udon - never rice noodles). Slick and slithery, I almost always add a splash of sesame oil and a squeeze of lime before serving.
We eat slowly and talk about the day. Stress is a faint and fleeting memory by the time the last noodles slurp through pursed lips.
I tried a new recipe tonight - courtesy of Eat with Clarity. It was a delicious and easy-to-follow recipe. I swapped udon for rice noodles because - rice noodles. I fried the peanuts first and reserved them to garnish at the end, and I added some red bell pepper that was growing tired in the fridge. I replicated the sauce verbatim. Rave reviews - we’ll make it again.
Maybe tomorrow, depending on how the day pans out. It’s been a week.
